The system implemented within the project aims at the timely and reliable identification of emerging risks related to fresh fruits and vegetables throughout the supply chain up to the consumer. The system will consist of the following key components:

•  a food control protocol focusing on factors associated with emerging risks
• a blockchain technology platform for tracking food throughout the supply chain that will integrate metrics and data from an IoT system that will implement automatic data collection
• an AI-based algorithm decision support system to identify risks.

Through web and mobile applications, this system will include public awareness and information tools, that will utilize the intensive and documented traceability supported by the blockchain platform that will be developed.
