Integrated System for Early Identification of Emerging Risks in the Supply Chain of Fresh Fruits and Vegetables
Scope and Objectives of the Project
Food safety is one of the main priorities of the EU and concerns all its citizens. Early and effective identification of emerging risks in the supply chain of fresh fruits and vegetables would be an important tool to provide safer food. According to the above mentioned needs, the primary goals of each of the three main components of the system are:
1. Objectives of fresh fruit and vegetable inspection protocol:
- Quality check in order to control chemical and biological risk factors of fresh fruits and vegetables through all stages of production process from the field/greenhouse to the consumer.
- Rapid detection of pathogenic microorganisms in food, given the importance of human health and life by using revolutionary techniques that combine low cost and short completion time.
- Design of a low cost extraction and rapid DNA isolation and isothermal PCR protocol to increase analytical sensitivity for bacterial identification.
2. Objectives of the Electronic Traceability Platform with Blockchain technology:
- Information exchange related to food safety risks throughout the supply chain, all the way to the consumer.
- The support of the implementation of quality control procedures through various phases of the supply chain.
- The validation of the quality of the products.
3. Objectives of a Decision Support System using Artificial Intelligence (AI) algorithms:
- The analysis of risk models using artificial intelligence algorithms.
- Scenario analysis for efficient risk treatment.
