According to the above mentioned needs, the primary goals of each of the three main components of the system are:

1. Objectives of fresh fruit and vegetable inspection protocol:

• Quality check in order to control chemical and biological risk factors of fresh fruits and vegetables through all stages of production process from the field/greenhouse to the consumer.
• Rapid detection of pathogenic microorganisms in food, given the importance of human health and life by using revolutionary techniques that combine low cost and short completion time.
• Design of a low cost extraction and rapid DNA isolation and isothermal PCR protocol to increase analytical sensitivity for bacterial identification.

2. Objectives of the Electronic Traceability Platform with Blockchain technology:

• Information exchange related to food safety risks throughout the supply chain, all the way to the consumer.
• The support of the implementation of quality control procedures through various phases of the supply chain.
• The validation of the quality of the products.

3. Objectives of a Decision Support System using Artificial Intelligence (AI) algorithms:

• The analysis of risk models using artificial intelligence algorithms.
• Scenario analysis for efficient risk treatment.
